Physically bound water

Water in concrete and mortar that has no liquid character any more is termed as physically bound. It fills the finest pores, the so-called pores. This physically bound water can only be removed from concrete and mortar by artificial drying at 105 °C (≙ 221 °F). The cement physically binds about 15 % of the water, i.e. 7.5 kg water at a ratio of 0.5 (50 kg water / 100 kg cement). The residual water is chemically bound or it evaporates.
